i know you need a quickie..

it’s around 9. you just arrived home after a hard working day at the office. if you live in Greece you have also faced one hell of a traffic trying to get to your place. you did not make it to the gym today but still, you need to feed your hunger. i am always open to suggestions on how to curb our appetite. but let’s get back to reality. you have to get in the kitchen and prepare something tasty but yet simple that can happily end your day. why don’t you try this? 


MUSHROOM ORZO RISOTTO


all you need is:

  • 400gr. orzo pasta
  • 100gr. of philadelphia cream cheese
  • 1 onion
  • one tablespoon of garlic mix pulp or 1 clove of garlic
  • chicken or vegetable stock
  • 1 cup sliced white mushrooms
  • 1/3 cup white wine
  • Greek olive oil
  • salt & pepper

what you have to do:

chop the onions and grate the garlic(if you don’t use a pulp). slice the mushrooms. set the temperature high and sauté all of the above in some Greek olive oil. add the orzo and stir a bit. pour the wine and leave it to evaporate. then, start adding the stock along with some salt and pepper. stir constantly. use as much stock as necessary, until the orzo is  al dente. finally stir in the cream cheese and serve while it’s hot! please remember to remove your masterpiece from the fire before all liquid is absorbed. and now enjoy the only quickie that you’d wish to last forever!
